Day 21: Ultimate nachos. So good.
Veggie protein crumbles are da bomb! The Mexican style crumbles are very easy to fix. I just throw it all in a nonstick pan, crumble it up, and BAM! It’s done. I serve it on top of blue corn tortilla chips, and top it all off with chopped tomatoes, cilantro and green onions. Oh, and don’t forget the sour cream and shredded cheese. Delish!
And for lunch today, I met up with Brandon at Firehouse Subs and got a veggie sub. It’s nice to know that every place I’ve been so far (even the Brazilian steakhouse) has vegetarian options.
