Day 23: Korean food feast! (Due to our out of town party, I didn’t have a chance to post this meal on Saturday night. But better late than never, right?)

Brandon and I went to the Korean restaurant in town to hit up the buffet. It’s really a great vegetarian buffet because they have so many meatless dishes to choose from. I piled my plate high with spicy soybean sprouts (the best!), two kinds of tofu dishes, japchae (stir fried noodles with vegetables), Korean tempura, veggie omelette, and Korean fried rice.

I absolutely love Korean food, and there are so many good Korean vegetarian recipes out there (like my spicy tofu and spinach side dish recipes). I think I may need to make the soybean salad later this week. I could eat pounds of that stuff.


Day 24: Taters and a “craisin” and mandarin orange salad!

Our friend Blake cooked for us today, and it was so good — and helped us recover from the fun Halloween party the night before. (Did you see my Antoine Dodson costume?)

He made his special potato dish for us, which he cooks using a variety of spices — and he also made a salad with mixed greens, cucumbers, tomatoes, craisins (cranberry + raisins) and mandarin oranges — lightly dressed with a balsamic vinaigrette. It was all so good. And for dessert, he baked a Cinnabon apple pie. Yum.

(Too bad my cell phone was out of juice, or else I would’ve captured the beauty of our post-party meal.)
