All good things must come to end, and last night our streak of cooking up delicious dinners at home came to a screeching halt when we made not just one, and not just two, but three completely craptastic dishes (which were so bad that I didn’t bother to snap photos of them).
Roasted Eggplant Salad
We had two recipes from our “Quick and Easy Thai” cookbook that we decided to make, and I had been dying to make the roasted eggplant salad all week. Last night, I finally had a chance to put it all together. The eggplants from the Farmers Market roasted well, and the other ingredients that get mixed in a bowl (before you chop and add the roasted eggplants) seemed to work together. Those ingredients were cilantro, lime, chilies, garlic, and some fish sauce. But when we dropped the eggplant into the bowl, the roasted eggplants somehow intensified the smell and flavor of the fish sauce — creating a bowl of NASTY.
It was very weird how the eggplants and fish sauce reacted. It was like a chemistry experiment gone terribly wrong. As soon as the eggplants made it into the bowl, everything started to smell horrible. So this dish made it into the garbage.
Chipotle Smashed Sweet Potatoes
After the eggplant disaster, we decided to use up the two sweet potatoes from the Farmers Market in a 20-minute recipe that we found in the Thanksgiving issue of Food Network magazine. This really wasn’t too bad — but what made it not fun to eat was that it really needed to go along with a protein, like ham or chicken. But we didn’t have any meat, and I still haven’t eaten meat since the end of September.
I think it would be okay to try this again for Thanksgiving. It just wasn’t good last night. I also think I overdid the chipotle peppers, and it was super spicy. Plus, I still kept thinking of the fish sauce from the eggplant salad. Gross.
Red Curry Butternut Squash
Here’s the thing, we made this earlier in the week (this is the other “Quick and Easy Thai” recipe), and it was delicious! So we thought that we could turn to this as our last resort because had leftover butternut squash to use up. But what made it raunchy last night was that the butternut squash was probably already too old to use. Although we refrigerated the leftover portion, it didn’t help at all. I think this dish is really good, but we just have to use new, fresh butternut squash. Oh, and we made some bamboo rice to go with it (because we ran out of every other type of rice), and we realized later that it was old, too. Um, it expired in 2009. :(
One messed up kitchen and three inedible dishes later, we hopped in the car with Otis and drove to Little Caesar’s for a $5 Hot-N-Ready cheese pizza. You know it’s bad when a Little Caesar’s cheese pizza is the best entree of the evening.
