Tomorrow is Iron Chef day at work, and the secret ingredient/theme is GREEN. Okay, so it didn’t really turn out very green, but I decided to make a pesto potato salad with green beans. I couldn’t find green potatoes, so Dutch yellows had to do.

The dish is cooling on my counter right now, but I snuck a few bites, and it’s pretty good. What’s great about it is that it’s mayonnaise free. It’s just potatoes, green beans, pesto, some green onions, white balsamic vinegar, and salt and pepper. Easy and delish.
