We’ve received so many heads of beautiful lettuce from our CSA shares the past few weeks that I’ve made turkey lettuce wraps twice in two weeks. It’s super simple to make, and it’s the perfect dish to whip up after a long day at work (because it’s just so darned fast to make!).

The filling is made with ground turkey, onions, cucumbers, hoisin sauce, peanut sauce, and soy sauce. I even used cucumbers from our own raised beds. And I like to sprinkle green onions and squirt Sriracha sauce on top. Everything is better with Sriracha, don’t you think?

What’s great about this is that you can make the filling as complex as you want — add mint, add peppers, and so on. And when it’s all wrapped up in a crisp lettuce leaf, it’s a flavor party in your mouth. Oh, I could eat turkey lettuce wraps every day. Mmm…
