We had three eggplants in this week’s CSA box, and I still had a bunch of green beans from last week’s share that I really needed to use up. So I opened up my Epicurious app on the iPhone and did a keyword search for “eggplant” and “green beans” and found this simple and tasty recipe. (Love the Epicurious app!)
Because we also have an abundance of green bell peppers from our own raised beds, I decided to add in two green bell peppers (sliced) to the eggplant and green beans, which I think added to the flavor and textures of the dish.
I absolutely love creating meals using ingredients that come from our farm and our front yard. Food tastes so much better when it comes straight from the earth and into the kitchen.
