Finally! Today was the first CSA pickup of the season, and I couldn't be any happier about it. This is our third year as shareholders with the Colvin Family Farm, and I love the fresh, naturally grown produce we get from them. 

As a virtual farmhand for the Colvin Family Farm this year, I'll be posting what I receive in my large share every week. Plus, I'll be sharing at least one recipe a week, as well as tips on how I prep and store my veggies.

So here's what I got in the box this week:

  • Two heads of green lettuce
  • Two heads of red lettuce
  • A bunch of spinach
  • Kale (my favorite!)
  • Radishes
  • Green onions
  • Two full containers of strawberries (the Colvin's have the BEST strawberries)

After this morning's pickup from the Market Square Farmers' Market in downtown Knoxville, I came home and prepped my goodies so they'd be ready for cooking and eating this week. (I'll have some detailed posts on how I prep my produce, so stay tuned.) I know we'll have some delicious salads for lunch, and I'm thinking of making turkey lettuce wraps one weeknight (it's sort of a go-to, quick and easy dish when I'm busy with work). And I might have to make some strawberry shortcake for dessert. I also might do a quiche or two (eat one, freeze one) using some of the local eggs that I get. So many possibilities.
