When your CSA box is full of ripe tomatoes and freshly picked basil, just add mozzarella for an instant Caprese salad. Seriously, all you need is cheese, olive oil, salt and pepper, and some balsamic (that's optional) -- and you have a delicious, bright appetizer. Or a main dish (in my case). Plus, it's a pretty meal.
It takes only a few minutes to slice your tomatoes and mozzarella, and another minute to assemble them on a dish with basil leaves. Drizzle the olive oil and balsamic, and sprinkle some salt and crack some pepper. Then you're ready to devour it. All of it.
