Super Salad

Day 31: Super salad and grilled cheese on wheat.

Today is the last day of Vegetarian Awareness Month, and I’m still trying to decide if I’m going to continue with a vegetarian diet. I think I will, but there’s a crazy good recipe that I found in our Thai cookbook for a red curry beef. Regardless, I still accomplished my goal of being meat free for a month — and it was a good experience. I learned how to make new dishes, order meatless meals when eating out, and I lost seven pounds (no exercise!).

To celebrate day 31, I created my very own super salad using greens from the Farmers Market. I topped it with broccoli sprouts, tomatoes, croutons, avocado, feta crumbles, and balsamic vinaigrette. So good! Brandon fixed us grilled cheese sandwiches to go along with the salad. And for lunch, I made Chinese veg and tofu, and I cooked up enough so we would have some for lunch tomorrow. Bok choy is the greatest. :)
