Baked Polenta with Swiss Chard and Cheese
So as I mentioned earlier, one of my favorite things about having a CSA is trying new recipes for my fresh veggies. On Sunday night, I made turkey lettuce wraps using the gorgeous heads of lettuce from our share. And on Monday, I decided to try this Swiss chard recipe from Epicurious. (If you have a smart phone, you absolutely must get the Epicurious app.)
What I like about this dish is that I can see myself making variations — using different greens and cheeses. I read in the Epicurious reviews that some folks added mushrooms and peppers to the bake. I’m thinking of adding some Benton’s bacon in the future. Mmm… Bacon.
